Advice and Conceivability of General usage of Beer Yeast
一、Introduction
Our country is the second biggest state of beer production. There are about 800 beer factories and the beer production is about 10million ton per year. According to this output, about 100k ton squeezing yeast, total up 20,000 ton dry yeast, was produced. The waste yeast in brewhouse has much value in use. Many biochemisty reactions can be catalyzed with the enzyme contained in yeast and much useful substance can be produced. Also there contained plenty of physiological compound in yeast, for example, some high value products ,such as fucose, glutathioine, yeast polysaccharid and Coenzyme I, could be extracted from yeast. Yeast also is wonderful protein resource enriched in Vitamine B and can be prepared as Yeast Extrct or Feedstuff protein. There are many brewhouse in the world, but the waste yeast is not sufficient to be used. Quite amount of them was released as waste by some factories, thus not only polluting environment, but also beeing extravagant. In some factories waste yeast was dried as feedstuff. But the efficiency and economic benefit is little.
In our lab the general usage of beer yeast had been studied for a long time. For example, the item of "Production of ATP with immobilized yeast" is one of the State "Seven-Five" tackle key problems, the item of "Production of Cytidine diphosphate choline with beer yeast" was one of Shandong Medicine Bureau's Key problem , the item of "Extraction RNA from beer yeast" was one of Shanghai Technology Committee's key problems, and the item of "Yeast Extract preparation from beer yeast" was asked by enterprise. All these projects were completed in pilot production or industrialisation.
According to the principle of the toppest economic benefit and sufficient logical practice, combining the characteristic that the brewhouse became bigger and bigger continuously, Closed recycle using system of beer yeast were put forward from our many years experience of research and development.
Formerly, some useful substance, such as ATP, Cytidine diphosphate choline,FDP, could also be produced with yeast. Due to disperse of usage and the haphazard release of yeast waste residue, second pollution was formed. But according to our principle above, all scrap waste yeast in the beer production can be used according to its quality good or bad. In the catalysis reaction system, ATP or CDP-C, or yeast extract can be separated from the liquid, and waste residue was dried as feedstuff protein. Thus closed recycle usility system was formed and toppest economic benefit could be obtained.

二、Products project and production size
The general scheme of yeast reuse was designed according to the factory that could produce 200,000 ton beer. Four kinds of products -----ATP, CDP-C, Yeast Extract, and feedstuff protein, were considered to develop.
ATP was named as energy currency coin in the organism. It is a kind of high energy molecule the takes part in muscle contraction, cell's other movement, initiative transport and some biosynthesis reaction. In clinic, ATP was widely used to therapy muscle atrophy, miocardial infarction, hepatitis and other diseases or as assistant medicine. Small batch of ATP was produced in our country formerly, but all factories stopped producing because of unenlightened techniques and impact of import product. And now,ATP depend on import and 50T/year ATP was imported as raw medicine.
The item of "Production of ATP with immobilized yeast" , one of the State tackle key problems,was completed by our lab. The research was reported abroad but not industrilisaed. In our techniques, the yield of ATP can reach to 90% (mol) or 140%(weight).
CDP-C is the chief pharmacy used to cure sequelae of brain trauma,brain exanimation and obiit. It alse has some efficiency to senile dementia and response bluntness. Henceforth it may be developed as health food of oldman's brain. The project was authenticated by Shandon Medicine Bureau in August 1991. It was ranked as one of Popularized key Technology items by Shanghai Technology Committee. In the process, conversion yield was 80% and whole yield was above 70%. The level reached advanced internationally. Because of lack of CMP as raw material, CDP-C mail depend on importing. Every year about 10 ton CDP-C was imported.
Yeast extractive which was extracted from yeast cells is similary to peptone, mixture of amino acid, peptide, water soluble vitamine and saccharide (mainly hepatin and fucose). Esperially kinds of Vitamine B and amino acid were very rich. In the process mixture of enzyme was used to degrade yeast cells. The product contains high quantity of amino acid and no odour and the clarify is very good. The product quality can arrive at the standard of British OXOID. It has abroad application value and populary froeground in the field of medicine, chemistry, research, functional food and seasonings.
4、Feedstuff protein
The waste residue in the process containing about 45% protein can be dried as best protein feedstuff instead of fish meal. It is known that our country is deficiency in protein resourse. It is a significative work that feedstuff protein is recoveried from the general use of beer yeast for some economic benefit can be obtained and environment pollution also can be avoided.
